Bottom of an open hot pressure cooker, in this order:
- puddle olive oil
- big red onion, chopped or whole
- washed and sorted bag of blackeyes
- meaty red bell, cut big
- cumin seeds
- celery seeds
- salt
- white pepper
- cayenne, but a lot
- gurgle of vine
- any kinda sausage or wiener
30 minutes, high.
Meantime, we made brown basmati with butter.
Leftovers: (x2days) broiled crisp under CA sharp cheddar.
I'd have added stripped cloven garlic or a garlicky frank right off.
